Sajji rice recipe method

Sajji is a traditional dish, typically made with marinated meat (often whole lamb or chicken) and served with rice. Here’s a simple recipe for Sajji with Rice:

Ingredients:

For the Sajji Marinade:

  • 1 whole chicken or leg of lamb (about 1.5 kg)
  • 1 tablespoon ginger-garlic paste
  • 2 tablespoons lemon juice
  • 2 teaspoons red chili powder
  • 1 teaspoon cumin powder
  • 1 teaspoon coriander powder
  • Salt to taste
  • Black pepper to taste
  • 1 tablespoon garam masala
  • 2-3 tablespoons oil

For the Rice:

  • 2 cups basmati rice
  • 4 cups water
  • 1-2 tablespoons ghee or oil
  • 1-2 bay leaves
  • 2-3 green cardamom pods
  • 4-5 whole cloves
  • Salt to taste

Instructions:

Step 1: Marinate the Meat

  1. Prepare the Marinade:
  • In a bowl, mix ginger-garlic paste, lemon juice, red chili powder, cumin, coriander, salt, black pepper, garam masala, and oil to form a paste.
  1. Marinate the Meat:
  • Rub the marinade all over the chicken or lamb, ensuring it’s well-coated.
  • Cover and marinate for at least 2 hours, preferably overnight in the refrigerator.

Step 2: Cook the Sajji

  1. Preheat the Oven:
  • Preheat your oven to 180°C (350°F).
  1. Roast the Meat:
  • Place the marinated meat in a roasting pan. If using chicken, you can leave it whole; if using lamb, you can cut it into large pieces.
  • Roast in the oven for about 1.5 to 2 hours, basting occasionally with the juices. The meat should be tender and golden brown.

Step 3: Prepare the Rice

  1. Rinse the Rice:
  • Rinse the basmati rice under cold water until the water runs clear. Soak for 30 minutes, then drain.
  1. Cook the Rice:
  • In a large pot, heat ghee or oil. Add bay leaves, cardamom pods, and cloves, and sauté for a minute.
  • Add the soaked rice and sauté for a couple of minutes.
  • Pour in the water, add salt, and bring to a boil. Once boiling, reduce the heat to low, cover, and cook for about 15-20 minutes or until the rice is cooked and fluffy.

Step 4: Serve

  1. Plate the Dish:
  • Serve the roasted sajji on a large platter alongside the rice.
  • Garnish with fresh coriander or mint if desired.
