Ingredients:
For the Chicken Filling:
- 500g boneless chicken, minced or finely chopped
- 1 onion, finely chopped
- 2-3 green chilies, finely chopped (adjust to taste)
- 1 tablespoon ginger-garlic paste
- 1 teaspoon cumin powder
- 1 teaspoon coriander powder
- 1/2 teaspoon garam masala
- Salt to taste
- 2 tablespoons fresh coriander, chopped
- 1 tablespoon oil or ghee
For the Dough:
- 2 cups whole wheat flour (atta)
- Water (as needed)
- Salt to taste
- 1 tablespoon oil (optional, for softer dough)
Instructions:
Prepare the Dough:
- In a mixing bowl, combine whole wheat flour and salt. Add water gradually, kneading until you form a smooth, pliable dough. You can add oil for extra softness.
- Cover the dough with a damp cloth and let it rest for about 30 minutes.
Prepare the Chicken Filling:
- Heat oil in a pan over medium heat. Add chopped onions and sauté until golden brown.
- Add ginger-garlic paste and green chilies. Cook for a minute until fragrant.
- Add the minced chicken, cumin powder, coriander powder, garam masala, and salt. Cook until the chicken is fully cooked and the mixture is dry. Stir in fresh coriander and remove from heat. Let it cool.
Assemble the Parathas:
- Divide the dough into equal portions (about the size of a golf ball).
- Roll out each portion into a small circle. Place a spoonful of the chicken filling in the center.
- Gather the edges of the dough over the filling and pinch to seal. Gently flatten it.
- Roll out the filled dough ball into a larger circle (about 6-8 inches in diameter) with a rolling pin, being careful not to let the filling spill out.
Cook the Parathas:
- Heat a tava or non-stick skillet over medium heat. Place the rolled paratha on the hot skillet.
- Cook for about 2-3 minutes on one side until brown spots appear, then flip it over.
- Brush with ghee or oil and cook the other side for another 2-3 minutes until crispy and golden brown.
- Repeat with the remaining dough and filling.
