Indian Kofta Recipe
Ingredients:
- For the Kofta:
- 2 cups grated bottle gourd (lauki) or potato
- 1 cup grated paneer (cottage cheese)
- 1/2 cup besan (gram flour)
- 1-2 green chilies, finely chopped
- 1 tsp ginger, grated
- 1/2 tsp cumin powder
- 1/2 tsp garam masala
- Salt to taste
- Oil for frying
- For the Gravy:
- 2 large onions, finely chopped
- 2 tomatoes, pureed
- 1 tsp ginger-garlic paste
- 1-2 green chilies, slit (adjust to taste)
- 1 tsp cumin seeds
- 1/2 tsp turmeric powder
- 1 tsp red chili powder
- 1 tsp coriander powder
- 1 tsp garam masala
- 2-3 tbsp oil
- Salt to taste
- Fresh cilantro, chopped (for garnish)
Instructions:
- Prepare the Kofta:
- In a bowl, combine grated bottle gourd (make sure to squeeze out excess water), paneer, besan, green chilies, ginger, cumin powder, garam masala, and salt. Mix well to form a dough.
- Shape the mixture into small balls or fritters.
- Fry the Kofta:
- Heat oil in a deep frying pan over medium heat. Fry the koftas until golden brown and crisp on all sides. Remove and drain on paper towels.
- Prepare the Gravy:
- In a separate pan, heat oil over medium heat. Add cumin seeds and let them splutter.
- Add chopped onions and sauté until golden brown.
- Stir in ginger-garlic paste and green chilies. Sauté for another minute.
- Add tomato puree and cook until the oil separates from the mixture.
- Add turmeric, red chili powder, coriander powder, and salt. Mix well and cook for 2-3 minutes.
- Finish the Gravy:
- Add water to adjust the consistency of the gravy and bring to a simmer. Stir in garam masala and cook for another minute.
- Serve:
- Gently place the fried koftas into the gravy and let them soak for a few minutes before serving. Garnish with fresh cilantro.
- Enjoy:
- Serve hot with naan, roti, or rice.
