Ingredients

  • 500g carrots (preferably red or orange, grated)
  • 4 cups full-fat milk
  • 1 cup sugar (adjust to taste)
  • 1/2 cup khoya (optional, for richness)
  • 1/4 cup ghee (clarified butter)
  • 1/4 teaspoon cardamom powder
  • A handful of chopped nuts (like almonds, cashews, and pistachios)
  • A handful of raisins (optional)

Instructions

1. Grate the Carrots:

  • Wash and peel the carrots, then grate them using a grater or food processor.

2. Cook the Carrots:

  • In a heavy-bottomed pan or kadhai, add the grated carrots and 4 cups of milk. Bring it to a boil over medium heat.

3. Simmer:

  • Reduce the heat and simmer, stirring occasionally, until the milk reduces and thickens (about 30-40 minutes).

4. Add Sugar:

  • Once the milk has thickened, add the sugar and mix well. Continue to cook for another 10-15 minutes, stirring frequently, until the mixture becomes thick.

5. Add Khoya and Ghee:

  • If using khoya, crumble it and add it to the halwa. Then, add ghee and mix well. Cook for another 5-10 minutes.

6. Flavor with Cardamom:

  • Add the cardamom powder and mix thoroughly. Cook for a couple more minutes to let the flavors blend.

7. Garnish:

  • Remove from heat and transfer the halwa to a serving dish. Garnish with chopped nuts and raisins.

8. Serve:

  • Gajar ka Halwa can be served warm or at room temperature. Enjoy it as a dessert or snack!
