Ingredients
- 1/2 cup basmati rice (or any short-grain rice)
- 4 cups full-fat milk
- 1/2 cup sugar (adjust to taste)
- 1/4 teaspoon cardamom powder
- 1/4 cup khoya (optional, for richness)
- A handful of chopped nuts (like almonds, cashews, and pistachios)
- A handful of raisins
- A pinch of saffron strands (optional)
Instructions
1. Rinse the Rice:
- Rinse the rice under cold water until the water runs clear. Soak it in water for about 30 minutes, then drain.
2. Boil the Milk:
- In a heavy-bottomed pan, bring the milk to a boil over medium heat. Stir occasionally to prevent it from sticking to the bottom.
3. Cook the Rice:
- Once the milk is boiling, add the drained rice. Reduce the heat to low and cook, stirring frequently, until the rice is soft and the mixture thickens (about 25-30 minutes).
4. Add Sugar and Flavorings:
- Stir in the sugar, cardamom powder, and saffron (if using). Cook for another 5-10 minutes, allowing the sugar to dissolve and the Kheer to thicken further.
5. Add Khoya:
- If using khoya, crumble it and mix it into the Kheer. This adds richness and flavor.
6. Garnish:
- In a separate pan, lightly toast the nuts and raisins in a little ghee until golden. Add them to the Kheer and mix well.
