Instructions:
- Rinse the Rice:
- Rinse the basmati rice under cold water until the water runs clear. Soak for 30 minutes, then drain.

- In a pot, heat oil or ghee over medium heat. Add cumin seeds and let them splutter. Add the sliced onions and sauté until golden brown.

- Stir in the ginger-garlic paste and green chilies. Cook for a minute, then add the mixed vegetables. Sauté for 5-7 minutes until they are slightly tender.
- Cook the Rice:
- Add the drained rice to the pot and stir gently to combine with the vegetables. Add water or broth, garam masala, and salt. Bring to a boil.
- Simmer:
- Once boiling, reduce the heat to low, cover the pot, and let it cook for about 15-20 minutes, or until the rice is cooked and water is absorbed.
- Fluff and Garnish:
- Remove from heat and let it sit covered for 5 minutes. Fluff with a fork and garnish with fresh cilantro or mint.
Shami Kabab Recipe
Ingredients:
- 250 grams minced meat (beef or chicken)
- 1/2 cup split chickpeas (chana dal)
- 1 medium onion, roughly chopped
- 2-3 green chilies
- 1 teaspoon ginger-garlic paste
- 1 teaspoon cumin seeds
- 1/2 teaspoon garam masala
- Salt, to taste
- Fresh cilantro or mint, chopped
- 1 egg (optional, for binding)
- Oil, for shallow frying
Instructions:
- Soak the Chana Dal:
- Soak the split chickpeas in water for at least 2 hours. Drain before using.
- Cook the Mixture:
- In a pot, combine minced meat, soaked chana dal, chopped onion, green chilies, ginger-garlic paste, cumin seeds, and salt. Add enough water to cover the ingredients. Cook until the meat and dal are tender (about 30-40 minutes).
- Blend the Mixture:
- Once cooked, let it cool slightly. Blend the mixture in a food processor until smooth. Add garam masala and chopped cilantro or mint. If the mixture is too loose, you can add an egg for binding.
- Shape the Kababs:
- Shape the mixture into small, flat patties.
- Fry the Kababs:
- Heat oil in a pan over medium heat. Fry the kababs until golden brown on both sides, about 3-4 minutes per side.
Serving:
Serve the vegetable rice alongside the shami kababs, garnished with fresh herbs. You can also add some yogurt or raita for extra flavor.
