Almond Kulfi Ice Cream

Servings: 6–8
Time: 4–6 hours (including chilling and freezing)

Ingredients

  • 2 cups heavy cream
  • 1 cup whole milk
  • 1/2 cup sweetened condensed milk
  • 1/4 cup sugar
  • 1/2 cup ground almonds (or almond flour)
  • 1/4 cup chopped almonds (for texture)
  • 1 tsp cardamom powder
  • 1/2 tsp rose water (optional, for fragrance)
  • Pinch of saffron threads (optional, for color and flavor)
  • 1 tsp vanilla extract
  • 1 tbsp chopped pistachios (for garnish)

Instructions

  1. Prepare the Almonds
    • If using whole almonds, lightly toast them in a dry pan for a few minutes until fragrant, then grind them into a fine powder or paste in a food processor.
    • If using almond flour, you can skip this step.
  2. Make the Ice Cream Base
    • In a saucepan, heat the milk and sugar over medium heat, stirring until the sugar dissolves. Bring to a simmer and cook for about 5 minutes, allowing the milk to reduce slightly.
    • Add the sweetened condensed milk, ground almonds, and cardamom powder. Stir well to combine. Simmer for another 5 minutes to thicken the mixture.
  3. Infuse with Saffron & Rose Water
    • If using saffron, soak the threads in a tablespoon of warm milk for about 10 minutes, then add it to the milk mixture.
    • Stir in the rose water, if using, and vanilla extract.
  4. Cool the Mixture
    • Remove from heat and let the mixture cool to room temperature, then refrigerate for at least 4 hours or overnight.
  5. Churn the Ice Cream
    • Pour the chilled mixture into your ice cream maker and churn according to the manufacturer’s instructions (usually 20–30 minutes).
  6. Add Chopped Almonds
    • During the last few minutes of churning, add the chopped almonds, mixing them into the ice cream.
  7. Freeze to Set
    • Transfer the churned ice cream into a container and freeze for at least 4 hours or until firm.
  8. Serve
    • Before serving, sprinkle with chopped pistachios for a lovely crunch and a pop of color.

This Almond Kulfi Ice Cream has that perfect balance of creamy richness with a beautiful nutty flavor and aromatic spices. Would you like a more traditional, no-churn kulfi recipe instead?
