Ingredients:
For the crust + crumble:
- 1Β½ cups all-purpose flour
- 1Β½ cups old-fashioned oats
- Β½ cup brown sugar
- ΒΌ tsp salt
- ΒΎ cup cold butter, cubed
- Zest of 1 lemon π
For the filling:
- 2 cups fresh or frozen blueberries
- ΒΌ cup sugar
- 1 tbsp cornstarch
- Juice of 1 lemon
- Optional: a dash of vanilla or a pinch of cinnamon
Instructions:
- Preheat oven to 350Β°F (175Β°C). Line an 8×8″ pan with parchment.
- Make the crumble:
In a bowl, mix flour, oats, brown sugar, salt, and lemon zest. Cut in the butter with a fork or your fingers until crumbly. Reserve ΒΎ cup for the topping. - Press & bake:
Press the rest into the bottom of the pan. Bake for 10 minutes to set. - Make the filling:
In a bowl, mix blueberries, sugar, cornstarch, and lemon juice. Pour over the crust. - Crumble & bake again:
Sprinkle the reserved crumble over the top and bake for 30β35 minutes, until golden and bubbly. - Cool completely (if you can wait π ) before slicing into bars.
