π Cherry Almond Crisp Bars
For the crust & crumble:
- 1 Β½ cups rolled oats
- 1 cup almond flour
- Β½ cup chopped almonds π°
- β cup brown sugar or coconut sugar
- Β½ tsp cinnamon
- ΒΌ tsp salt
- Β½ cup melted coconut oil or butter
- 1 tsp vanilla extract
For the cherry filling:
- 2 cups fresh or frozen cherries, pitted π
- 2 tbsp maple syrup or honey
- 1 tbsp lemon juice π
- 1 tbsp cornstarch or arrowroot
- Optional: a dash of almond extract for extra yum
Instructions:
- Preheat oven to 350Β°F (175Β°C). Line an 8×8β pan with parchment paper.
- Mix all crust/crumble ingredients until it sticks together like a crumble dough. Press 2/3 of the mixture into the pan as the base.
- In a saucepan, combine cherries, sweetener, lemon juice, and starch. Simmer 5β8 mins until thick and jammy.
- Spread cherry filling over the crust. Crumble the remaining oat mix on top.
- Bake for 30β35 mins until golden and bubbly. Cool completely before slicing into bars.
