Ingredients

For the Chicken Tikka:

  • 500g boneless chicken (cut into cubes)
  • 1 cup plain yogurt

  • 2 tablespoons vegetable oil
  • 4 garlic cloves (minced)
  • 1 tablespoon ginger (grated)
  • 1 tablespoon garam masala
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon turmeric powder
  • 1 teaspoon red chili powder (adjust to taste)
  • Salt to taste

For the Rice:

  • 2 cups basmati rice
  • 4 cups water or chicken broth
  • 1 onion (sliced)
  • 1 bay leaf
  • 2-3 green cardamom pods
  • 2-3 cloves
  • 1 cinnamon stick
  • Salt to taste
  • Fresh coriander (for garnish)
  • Lemon wedges (for serving)

Instructions

1. Marinate the Chicken:

  • In a bowl, mix yogurt, lemon juice, oil, garlic, ginger, garam masala, cumin, coriander, turmeric, red chili powder, and salt.
  • Add chicken cubes and coat well. Cover and marinate in the fridge for at least 1 hour (preferably overnight).

2. Cook the Chicken Tikka:

  • Oven Method: Preheat the oven to 200°C (400°F). Thread the marinated chicken onto skewers and place on a baking tray. Bake for 15-20 minutes, turning halfway, until cooked through.
