🛒 Ingredients:
- 1.5 lbs (680g) boneless, skinless chicken thighs or breasts, cut into chunks
- 1 tbsp oil (coconut or vegetable)
- 1 onion, finely chopped
- 3 garlic cloves, minced
- 1 tbsp fresh ginger, grated
- 1–2 tbsp curry powder (mild or hot, your choice)
- ½ tsp turmeric (optional, for color and depth)
- 1 can (13.5 oz / 400ml) full-fat coconut milk
- Zest and juice of 1 lime
- 1 tbsp fish sauce or soy sauce
- 1 tsp sugar or honey (to balance the acidity)
- Salt and pepper, to taste
- Fresh cilantro or Thai basil, for garnish
- Lime wedges, for serving
🔥 Instructions:
- Sear the Chicken:
- Heat oil in a large skillet or pot over medium-high heat. Add the chicken, season with salt and pepper, and sear until golden on the outside (don’t worry about cooking it through). Remove and set aside.
- Sauté the Aromatics:
- In the same pan, add more oil if needed. Sauté the chopped onion until soft and translucent, about 5 minutes.
- Add garlic and ginger; cook for another 1–2 minutes until fragrant.
- Add Spices & Simmer:
- Stir in curry powder and turmeric, letting the spices toast for 30 seconds.
- Pour in the coconut milk, lime zest, lime juice, fish sauce (or soy), and sugar. Stir to combine.
- Simmer the Curry:
- Return the chicken to the pan. Bring the curry to a gentle simmer.
- Cook uncovered for 15–20 minutes, or until the chicken is tender and the sauce is slightly thickened. Taste and adjust seasoning.
- Finish & Serve:
- Serve hot over jasmine rice, basmati, or cauliflower rice.
- Garnish with chopped cilantro or Thai basil and lime wedges.
