Ingredients (serves 4–6):
- 1 tbsp olive oil
- 1 onion, chopped
- 3 garlic cloves, minced
- 1 bell pepper, diced
- 1–1.5 lbs ground beef or plant-based ground (or use lentils for vegan!)
- 2 tbsp tomato paste
- 1 can (14 oz) fire-roasted diced tomatoes
- 1 can (15 oz) kidney beans, drained
- 1 can (15 oz) black beans or pinto beans, drained
- 1 cup veggie or beef broth
- 2 tsp chili powder
- 1 tsp smoked paprika
- 1 tsp cumin
- 1/2 tsp oregano
- Salt & pepper to taste
- Optional: dash of liquid smoke or chipotle for extra campfire vibes
Instructions:
- Sauté the Base:
In a large pot, heat oil over medium heat. Add onion, garlic, and bell pepper. Sauté until soft and fragrant, about 5 minutes. - Brown the Meat (or not):
Add ground meat or plant-based alt. Cook until browned. Stir in tomato paste and cook 1 more minute. - Add the Flavor:
Pour in fire-roasted tomatoes, beans, broth, and all spices. Stir well. Add liquid smoke or chipotle if you’re going full campfire mode. - Simmer the Cozy:
Cover and simmer on low for 30–45 minutes, stirring occasionally, until thick and deeply flavorful. - Top & Serve:
