Indian Kofta Recipe

Ingredients:

  • For the Kofta:
  • 2 cups grated bottle gourd (lauki) or potato
  • 1 cup grated paneer (cottage cheese)
  • 1/2 cup besan (gram flour)
  • 1-2 green chilies, finely chopped
  • 1 tsp ginger, grated
  • 1/2 tsp cumin powder
  • 1/2 tsp garam masala
  • Salt to taste
  • Oil for frying
  • For the Gravy:
  • 2 large onions, finely chopped
  • 2 tomatoes, pureed
  • 1 tsp ginger-garlic paste
  • 1-2 green chilies, slit (adjust to taste)
  • 1 tsp cumin seeds
  • 1/2 tsp turmeric powder
  • 1 tsp red chili powder
  • 1 tsp coriander powder
  • 1 tsp garam masala
  • 2-3 tbsp oil
  • Salt to taste
  • Fresh cilantro, chopped (for garnish)

Instructions:

  1. Prepare the Kofta:
  • In a bowl, combine grated bottle gourd (make sure to squeeze out excess water), paneer, besan, green chilies, ginger, cumin powder, garam masala, and salt. Mix well to form a dough.
  • Shape the mixture into small balls or fritters.
  1. Fry the Kofta:
  • Heat oil in a deep frying pan over medium heat. Fry the koftas until golden brown and crisp on all sides. Remove and drain on paper towels.
  1. Prepare the Gravy:
  • In a separate pan, heat oil over medium heat. Add cumin seeds and let them splutter.
  • Add chopped onions and sauté until golden brown.
  • Stir in ginger-garlic paste and green chilies. Sauté for another minute.
  • Add tomato puree and cook until the oil separates from the mixture.
  • Add turmeric, red chili powder, coriander powder, and salt. Mix well and cook for 2-3 minutes.
  1. Finish the Gravy:
  • Add water to adjust the consistency of the gravy and bring to a simmer. Stir in garam masala and cook for another minute.
  1. Serve:
  • Gently place the fried koftas into the gravy and let them soak for a few minutes before serving. Garnish with fresh cilantro.
  1. Enjoy:
  • Serve hot with naan, roti, or rice.
