For the Chicken:

- 5 tbsp unsalted butter (softened)
- 2 tbsp olive oil
- 1 tbsp fresh thyme or rosemary (or 1 tsp dried)
- 1 lemon (halved)
- Salt & pepper to taste
- 1 onion (quartered, optional for roasting base)

- Preheat the Oven:
Heat oven to 200Β°C (400Β°F). - Make Garlic Butter:
In a small bowl, combine softened butter, minced garlic, chopped herbs, salt, and pepper. - Prepare the Chicken:
Pat the chicken dry with paper towels (very important for crispy skin!).
Gently loosen the skin over the chicken breasts with your fingers and spread some garlic butter underneath the skin.
Rub the rest of the garlic butter all over the outside of the chicken.
Stuff the cavity with lemon halves and a few extra herb sprigs if you like. - Roast the Chicken:
Place the chicken breast-side up in a roasting pan (on top of onions if using).
Roast for about 1 hour 15 minutes to 1 hour 30 minutes, or until the internal temperature at the thickest part of the thigh reaches 75Β°C (165Β°F). - Baste:
Halfway through roasting, spoon some pan juices over the chicken for extra flavor and beautiful browning. - Rest and Serve:
Let the chicken rest for 10β15 minutes before carving. Spoon some buttery pan juices over the slices when serving!
