Paye Recipe
Ingredients:
- 1 kg paye (lamb or goat trotters)
- 2 large onions, finely sliced
- 2-3 tablespoons ginger-garlic paste
- 2-3 green chilies, slit
- 1 cup yogurt, beaten
- 2-3 tablespoons cooking oil or ghee
- 1 teaspoon cumin seeds
- 1 teaspoon turmeric powder
- 2 teaspoons red chili powder (adjust to taste)
- 2 teaspoons coriander powder
- 1-2 teaspoons garam masala
- Salt, to taste
- Fresh coriander leaves, for garnish
- Water, as needed
- Lemon wedges, for serving
Instructions:
- Clean the Paye: Rinse the trotters thoroughly under running water to remove any impurities. You can also soak them in water for a few hours.
- Sauté Onions: In a large pot, heat the oil or ghee over medium heat. Add the sliced onions and sauté until golden brown.
- Add Ginger-Garlic Paste: Stir in the ginger-garlic paste and green chilies. Cook for 2-3 minutes until the raw smell disappears.
- Add Spices: Add the cumin seeds, turmeric powder, red chili powder, coriander powder, and salt. Cook for a minute, stirring well.
- Cook the Paye: Add the cleaned paye to the pot and mix well to coat them in the spices. Cook for about 10 minutes, stirring occasionally.
- Add Yogurt: Lower the heat and add the beaten yogurt, mixing it thoroughly with the paye. Cook for another 5 minutes.
- Add Water: Pour in enough water to cover the paye completely (about 4-5 cups). Bring to a boil, then reduce the heat to low. Cover and simmer for about 2-3 hours, or until the paye are tender and the flavors are well developed. You may need to add more water if it evaporates.
- Finish with Garam Masala: Once cooked, sprinkle garam masala over the dish and stir gently. Cook for an additional 5 minutes.
- Garnish and Serve: Garnish with fresh coriander leaves and serve hot with naan, roti, or rice. Add lemon wedges on the side for an extra zing!
