Jamaican Oxtail Stew is slow-cooked comfort food with swagger. It’s savory, a little sweet, a touch spicy, and 100% soul-warming.


Jamaican Oxtail Stew
(Tender oxtail, rich gravy, and bold island flavor in every bite.)
Ingredients:
- 2–3 lbs oxtails (ask your butcher to trim excess fat)
- 2 tsp all-purpose seasoning or oxtail seasoning
- Salt & pepper
- 2 tbsp browning sauce (for color + depth)
- 2 tbsp soy sauce
- 1 tbsp Worcestershire sauce
- 3 cloves garlic, minced
- 2 tsp fresh thyme (or 1 tsp dried)
- 2 stalks scallions, chopped
- 1 Scotch bonnet pepper, whole or sliced (optional but
)
- 1 onion, sliced
- 2 carrots, chopped
- 1 can butter beans (drained)
- 3 cups beef broth or water
- 1 tbsp brown sugar (for caramelizing)
- 2 tbsp oil (for searing)
How to Make:
- Season the oxtail
- In a bowl: add oxtail, all-purpose seasoning, browning, soy sauce, Worcestershire, garlic, scallion, thyme, salt, and pepper
- Mix well, let marinate at least 1 hour (overnight =

- Sear it up
- Heat oil in a heavy pot or Dutch oven
- Add brown sugar, let it melt & bubble slightly, then sear oxtail in batches until browned
- Build the stew
- Add onions, carrots, pepper, and the rest of the marinade
- Pour in beef broth to cover
- Bring to a boil, reduce to simmer → cover and cook 2.5–3 hours (until oxtail is super tender)
- Final touches
- Stir in butter beans
- Let it simmer uncovered for 15–20 mins to thicken up the gravy
- Adjust salt & pepper to taste
Serve With:
