Kachori Chaat Recipe

Here’s a delicious recipe for Kachori Chaat that you can easily make at home:

Ingredients

For the Kachoris:

  • 1 cup all-purpose flour (maida)
  • 1/4 cup semolina (sooji)
  • 2 tablespoons ghee or oil
  • 1/2 teaspoon ajwain (carom seeds)
  • 1/2 teaspoon salt
  • Water (as needed)
  • Oil (for deep frying)

For the Filling:

  • 1 cup urad dal (split black gram), soaked for a few hours
  • 1 teaspoon cumin seeds
  • 1 teaspoon red chili powder
  • 1/2 teaspoon turmeric powder
  • Salt to taste
  • 1 tablespoon chopped coriander leaves
  • 1 tablespoon ghee or oil (for tempering)

For Chaat Toppings:

  • 1 cup yogurt, whisked
  • 1/2 cup tamarind chutney
  • 1/2 cup green chutney
  • 1/2 cup chopped onions
  • 1/2 cup chopped tomatoes
  • 1/2 teaspoon chaat masala
  • Fresh coriander leaves (for garnish)
  • Sev (crispy chickpea noodles) for topping

Instructions

1. Prepare the Filling:

  • Drain the soaked urad dal and grind it coarsely with cumin seeds, red chili powder, turmeric powder, and salt.
  • Heat ghee or oil in a pan, add the ground dal mixture, and cook for a few minutes until fragrant. Stir in chopped coriander. Let it cool.

2. Make the Kachori Dough:

  • In a bowl, mix all-purpose flour, semolina, ajwain, salt, and ghee/oil.
  • Gradually add water to form a soft dough. Cover and let it rest for about 30 minutes.

3. Shape the Kachoris:

  • Divide the dough into small balls. Flatten each ball, place a spoonful of the filling in the center, and seal the edges to form a ball again.
  • Gently flatten it again to form a disc.

4. Fry the Kachoris:

  • Heat oil in a deep frying pan. Once hot, fry the kachoris on medium heat until golden and puffed. Drain on paper towels.

5. Assemble the Chaat:

  • Place the fried kachoris on a serving plate. Crush them slightly.
  • Drizzle with whisked yogurt, tamarind chutney, and green chutney.
  • Top with chopped onions, tomatoes, and sprinkle chaat masala.
  • Garnish with fresh coriander and sev.

6. Serve:

  • Serve immediately and enjoy your Kachori Chaat!
