🛒 Ingredients:

For the Meatloaf:

  • 1.5 lbs ground beef (or mix of beef + pork)
  • 1/2 cup panko breadcrumbs
  • 1/3 cup milk
  • 2 cloves garlic, minced
  • 2 green onions, finely chopped
  • 2 tbsp soy sauce
  • 1 tbsp sesame oil
  • 1 egg
  • 1 tbsp gochujang (Korean chili paste – add more for heat)
  • 1 tsp ginger, grated
  • Salt & pepper to taste

For the Glaze:

  • 2 tbsp ketchup
  • 1.5 tbsp gochujang
  • 1 tbsp brown sugar or honey
  • 1 tbsp soy sauce
  • 1 tsp rice vinegar
  • 1 tsp sesame oil

Topping (optional but chef’s kiss):

  • Toasted sesame seeds
  • Extra green onions, sliced
  • A lil’ drizzle of sriracha or mayo

🔥 How to Make:

1. Preheat Oven:

  • 375°F (190°C)

2. Mix Meatloaf:

  • In a large bowl, mix panko + milk and let it sit 5 min
  • Add all remaining meatloaf ingredients
  • Mix gently until combined (don’t overwork it!)

3. Shape & Bake:

  • Form into a loaf shape and place on a parchment-lined baking sheet or loaf pan
  • Bake for 30 min

4. Glaze & Finish:

  • While baking, whisk glaze ingredients together
  • After 30 min, brush glaze generously over the top
  • Bake another 15–20 min, or until internal temp hits 160°F (71°C)

5. Rest & Slice:

  • Let rest 10 minutes before slicing
  • Sprinkle with sesame seeds + scallions to serve
