🛒 Ingredients:
For the Meatloaf:
- 1.5 lbs ground beef (or mix of beef + pork)
- 1/2 cup panko breadcrumbs
- 1/3 cup milk
- 2 cloves garlic, minced
- 2 green onions, finely chopped
- 2 tbsp soy sauce
- 1 tbsp sesame oil
- 1 egg
- 1 tbsp gochujang (Korean chili paste – add more for heat)
- 1 tsp ginger, grated
- Salt & pepper to taste
For the Glaze:
- 2 tbsp ketchup
- 1.5 tbsp gochujang
- 1 tbsp brown sugar or honey
- 1 tbsp soy sauce
- 1 tsp rice vinegar
- 1 tsp sesame oil
Topping (optional but chef’s kiss):
- Toasted sesame seeds
- Extra green onions, sliced
- A lil’ drizzle of sriracha or mayo
🔥 How to Make:
1. Preheat Oven:
- 375°F (190°C)
2. Mix Meatloaf:
- In a large bowl, mix panko + milk and let it sit 5 min
- Add all remaining meatloaf ingredients
- Mix gently until combined (don’t overwork it!)
3. Shape & Bake:
- Form into a loaf shape and place on a parchment-lined baking sheet or loaf pan
- Bake for 30 min
4. Glaze & Finish:
- While baking, whisk glaze ingredients together
- After 30 min, brush glaze generously over the top
- Bake another 15–20 min, or until internal temp hits 160°F (71°C)
5. Rest & Slice:
- Let rest 10 minutes before slicing
- Sprinkle with sesame seeds + scallions to serve
