For the Chicken:
- 500g boneless chicken thighs (cut into bite-sized pieces)
- 1 cup cabbage (chopped)
- 1 small carrot (sliced thinly)
- 1 small sweet potato (optional, sliced thin)
- 1 onion (sliced)
- 2β3 green onions (cut into 2-inch pieces)
For the Marinade (Sauce):
- 2 tbsp gochujang (Korean chili paste)
- 1 tbsp gochugaru (Korean chili flakes, optional for extra heat)
- 2 tbsp soy sauce
- 1 tbsp sugar or honey
- 1 tbsp rice wine (mirin) or cooking sake
- 1 tbsp sesame oil
- 1 tbsp minced garlic
- 1 tsp grated ginger
- 1 tsp ground black pepper
πͺ Instructions:
- Prepare the Marinade:
In a bowl, whisk together gochujang, gochugaru, soy sauce, sugar, rice wine, sesame oil, garlic, ginger, and pepper. - Marinate the Chicken:
Toss the chicken pieces in the marinade.
Let it sit for at least 15β30 minutes (or longer for more flavor). - Cook the Chicken and Vegetables:
- Heat a large skillet or non-stick pan over medium-high heat.
- Add a splash of oil, then the chicken. Stir-fry for 2β3 minutes.
- Add the onion, carrot, and sweet potato. Stir-fry another 5 minutes.
- Add the cabbage and green onions last, tossing everything until the chicken is cooked through and the vegetables are tender but still crisp.
- Optional:
For extra charred flavor, cook uncovered for the last 2β3 minutes without stirring too much! - Serve:
Sprinkle with sesame seeds and more green onions if you like. Serve hot!
