Here’s a delightful recipe for Kulfi, a traditional Indian ice cream that’s rich and creamy. It’s perfect for hot days!
Kulfi Ice Cream Recipe
Ingredients
- 2 cups full-fat milk
- 1 cup heavy cream
- 1 cup condensed milk
- 1/2 cup sugar (adjust to taste)
- 1/4 cup milk powder
- 1/2 tsp cardamom powder
- 1/4 cup chopped nuts (pistachios, almonds, cashews)
- A pinch of saffron strands (optional)
- 1 tsp rose water (optional)
Instructions
1. Boil the Milk:
- In a saucepan, bring the full-fat milk to a boil. Reduce the heat and let it simmer, stirring frequently, until it reduces to about half its volume. This should take about 20-25 minutes.
2. Mix Ingredients:
- In a mixing bowl, combine the reduced milk, heavy cream, condensed milk, sugar, milk powder, and cardamom powder. Stir until smooth.
- If using saffron, soak the strands in a tablespoon of warm milk and add this to the mixture.
3. Add Nuts and Rose Water:
- Fold in the chopped nuts and rose water (if using). Mix well.
4. Pour into Molds:
- Pour the mixture into kulfi molds or small cups. Cover with a lid or plastic wrap.
5. Freeze:
- Place the molds in the freezer and let them freeze for at least 6-8 hours, or until completely set.
6. Serve:
- To serve, dip the molds in warm water for a few seconds to loosen the kulfi. Gently pull it out and enjoy!
Tips:
- You can customize your kulfi by adding flavors like mango, chocolate, or saffron.
- For a creamier texture, you can blend the mixture before pouring it into molds.
Enjoy your homemade kulfi! It’s a delicious treat that everyone will love!
