Ingredients

  • 2 cups full-fat milk
  • 1 cup heavy cream
  • 1 cup condensed milk
  • 1/2 cup sugar (adjust to taste)
  • 1/4 cup milk powder
  • 1/2 tsp cardamom powder
  • 1/4 cup chopped nuts (pistachios, almonds, cashews)
  • A pinch of saffron strands (optional)
  • 1 tsp rose water (optional)

Instructions

1. Boil the Milk:

  • In a saucepan, bring the full-fat milk to a boil. Reduce the heat and let it simmer, stirring frequently, until it reduces to about half its volume. This should take about 20-25 minutes.

2. Mix Ingredients:

  • In a mixing bowl, combine the reduced milk, heavy cream, condensed milk, sugar, milk powder, and cardamom powder. Stir until smooth.
  • If using saffron, soak the strands in a tablespoon of warm milk and add this to the mixture.

3. Add Nuts and Rose Water:

  • Fold in the chopped nuts and rose water (if using). Mix well.

4. Pour into Molds:

  • Pour the mixture into kulfi molds or small cups. Cover with a lid or plastic wrap.

5. Freeze:

  • Place the molds in the freezer and let them freeze for at least 6-8 hours, or until completely set.

6. Serve:

  • To serve, dip the molds in warm water for a few seconds to loosen the kulfi. Gently pull it out and enjoy!

  • You can customize your kulfi by adding flavors like mango, chocolate, or saffron.
  • For a creamier texture, you can blend the mixture before pouring it into molds.
