Lazy Sunday Pancakes – fluffy, no-fuss pancakes for chill mornings

🥞 Lazy Sunday Pancakes

Fluffy, golden, and totally low-effort – just like your Sunday should be.

Ingredients (makes 6–8 pancakes):

  • 1 cup all-purpose flour
  • 2 tbsp sugar
  • 1 tbsp baking powder
  • Pinch of salt
  • 1 cup milk (dairy or plant-based)
  • 1 egg
  • 2 tbsp melted butter or oil
  • 1 tsp vanilla extract (optional)

Instructions:

  1. Mix the Dry Stuff:
    In a bowl, whisk together flour, sugar, baking powder, and salt.
  2. Mix the Wet Stuff:
    In another bowl, whisk the milk, egg, melted butter, and vanilla.
  3. Combine & Rest:
    Pour the wet ingredients into the dry, stir until just combined (a few lumps are okay!). Let it rest for 5 minutes.
  4. Cook It Up:
    Heat a non-stick pan over medium. Lightly grease it. Pour 1/4 cup batter for each pancake. Flip when bubbles appear (about 2 mins per side).
  5. Top & Chill:
    Stack ’em high. Add maple syrup, berries, whipped cream, or whatever makes your soul smile.
