
🥞 Lazy Sunday Pancakes
Fluffy, golden, and totally low-effort – just like your Sunday should be.
Ingredients (makes 6–8 pancakes):
- 1 cup all-purpose flour
- 2 tbsp sugar
- 1 tbsp baking powder
- Pinch of salt
- 1 cup milk (dairy or plant-based)
- 1 egg
- 2 tbsp melted butter or oil
- 1 tsp vanilla extract (optional)
Instructions:
- Mix the Dry Stuff:
In a bowl, whisk together flour, sugar, baking powder, and salt. - Mix the Wet Stuff:
In another bowl, whisk the milk, egg, melted butter, and vanilla. - Combine & Rest:
Pour the wet ingredients into the dry, stir until just combined (a few lumps are okay!). Let it rest for 5 minutes. - Cook It Up:
Heat a non-stick pan over medium. Lightly grease it. Pour 1/4 cup batter for each pancake. Flip when bubbles appear (about 2 mins per side). - Top & Chill:
Stack ’em high. Add maple syrup, berries, whipped cream, or whatever makes your soul smile.
