Classic Macaroni and Cheese

Ingredients:

  • 8 ounces elbow macaroni
  • 2 tablespoons butter
  • 2 tablespoons all-purpose flour
  • 2 cups milk (whole or 2%)
  • 2 cups shredded cheddar cheese (or a mix of your favorites)
  • 1 teaspoon mustard powder (optional)
  • Salt and pepper, to taste
  • 1/2 cup breadcrumbs (optional, for topping)
  • Paprika (optional, for garnish)

Instructions:

  1. Cook the Macaroni:
    Boil a large pot of salted water. Add the macaroni and cook according to package instructions until al dente. Drain and set aside.
  2. Make the Cheese Sauce:
    In a saucepan, melt the butter over medium heat. Stir in the flour and cook for about 1 minute to create a roux, stirring constantly.
  3. Add Milk:
    Gradually whisk in the milk, ensuring there are no lumps. Continue to cook, stirring frequently, until the mixture thickens (about 5-7 minutes).
  4. Add Cheese:
    Remove the saucepan from heat and stir in the shredded cheese until melted and smooth. If using, add mustard powder, and season with salt and pepper to taste.
  5. Combine:
    Add the cooked macaroni to the cheese sauce, stirring to coat the pasta evenly.
  6. Bake (Optional):
    If you like a baked version, preheat your oven to 350°F (175°C). Transfer the macaroni and cheese to a greased baking dish. If desired, sprinkle breadcrumbs on top and a bit more cheese. Bake for about 20-25 minutes until golden and bubbly.
  7. Serve:
    Serve hot, garnished with a sprinkle of paprika if desired.
