Pakistani Korma Recipe

Here’s a flavorful Korma recipe that you can try at home:

Ingredients

For the Marinade:

  • 500g meat (chicken, beef, or lamb), cut into pieces
  • 1 cup plain yogurt
  • 2 tablespoons ginger-garlic paste
  • 2 tablespoons lemon juice
  • 1 teaspoon red chili powder
  • 1 teaspoon turmeric powder
  • Salt to taste

For the Korma:

  • 3 tablespoons vegetable oil or ghee
  • 2 large onions, thinly sliced
  • 2-3 green chilies (adjust to taste)
  • 1-2 teaspoons garam masala
  • 1 teaspoon coriander powder
  • 1 teaspoon cumin powder
  • 1 cup coconut milk or heavy cream
  • 1/4 cup cashew nuts or almonds (optional, soaked and blended)
  • Fresh coriander leaves (for garnish)

Instructions

1. Marinate the Meat:

  • In a large bowl, mix together yogurt, ginger-garlic paste, lemon juice, red chili powder, turmeric powder, and salt.
  • Add the meat pieces, coating them well. Cover and marinate for at least 1 hour, preferably overnight in the refrigerator.

2. Cook the Korma:

  • Heat oil or ghee in a large pot over medium heat. Add the sliced onions and fry until golden brown. Remove half for garnishing later.
  • Add the marinated meat and green chilies to the pot. Cook until the meat is browned on all sides.
  • Stir in the garam masala, coriander powder, and cumin powder. Cook for a few minutes until fragrant.
  • If using, add the blended nuts and cook for another 2-3 minutes.
  • Pour in the coconut milk or heavy cream, stir well, and bring to a gentle simmer. Cover and cook on low heat for about 30-40 minutes, or until the meat is tender. Stir occasionally.

3. Serve:

  • Once cooked, check for seasoning and adjust salt if needed.
  • Garnish with fried onions and fresh coriander leaves.
  • Serve hot with naan, rice, or roti.
