- 1.5 cups water

- 4 cups broth (chicken, pork, or dashi β with a splash of soy or miso paste)
- Toppings: sliced green onions, nori, sesame seeds, chili oil, bean sprouts, corn, or mushrooms

1. Simmer the Pork Belly:
- Combine soy, mirin, sugar, vinegar, garlic, ginger, and water in a pot
- Add pork belly and simmer (covered) on low for 1.5β2 hours until tender
