Rainbow Cake Recipe

Ingredients:

For the Cake:

  • 2 ¾ cups all-purpose flour
  • 1 tablespoon baking powder
  • ½ teaspoon salt
  • 1 cup unsalted butter, softened
  • 2 cups granulated sugar
  • 4 large eggs
  • 1 tablespoon vanilla extract
  • 1 cup whole milk
  • Food coloring (red, orange, yellow, green, blue, purple)

For the Frosting:

  • 1 cup unsalted butter, softened
  • 4 cups powdered sugar
  • 1/4 cup heavy cream (or milk)
  • 2 teaspoons vanilla extract
  • Food coloring (optional, for decoration)

Instructions:

1. Preheat the Oven:
Preheat your oven to 350°F (175°C). Grease and flour six 6-inch round cake pans.

2. Prepare the Cake Batter:

  • In a medium bowl, whisk together the flour, baking powder, and salt.
  • In a large bowl, beat the butter and sugar together until light and fluffy (about 3-4 minutes).
  • Add the eggs, one at a time, mixing well after each addition. Then mix in the vanilla extract.
  • Gradually add the dry ingredients to the wet mixture, alternating with the milk. Mix until just combined.

3. Divide and Color the Batter:

  • Divide the batter evenly into six bowls. Add a few drops of food coloring to each bowl to create the colors of the rainbow (red, orange, yellow, green, blue, and purple). Mix until fully incorporated.

4. Bake the Cakes:

  • Pour each colored batter into the prepared cake pans. Bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean.
  • Allow the cakes to cool in the pans for 10 minutes before transferring them to wire racks to cool completely.

5. Make the Frosting:

  • In a large bowl, beat the softened butter until creamy. Gradually add the powdered sugar, heavy cream, and vanilla extract. Beat until smooth and fluffy.

6. Assemble the Cake:

  • Once the cakes are completely cool, place the purple layer on a cake stand or plate. Spread a layer of frosting on top. Repeat this process with the blue, green, yellow, orange, and red layers.
  • Frost the top and sides of the cake with the remaining frosting.

7. Decorate:

  • If desired, add extra decorations like sprinkles or colored frosting on top.
