Ingredients

For the Cake:

  • 2 ¾ cups all-purpose flour
  • 2 ½ tsp baking powder
  • ½ tsp salt
  • 1 cup unsalted butter, softened
  • 2 cups granulated sugar
  • 4 large eggs
  • 1 tbsp vanilla extract
  • 1 cup whole milk
  • Food coloring (red, orange, yellow, green, blue, purple)

For the Buttercream Frosting:

  • 1 cup unsalted butter, softened
  • 4-5 cups powdered sugar
  • 2-3 tbsp heavy cream (or milk)
  • 1 tsp vanilla extract
  • Food coloring (optional, for decoration)

Instructions

1. Preheat the Oven:
Preheat your oven to 350°F (175°C). Grease and flour six 8-inch round cake pans.

2. Prepare the Cake Batter:

  • In a bowl, whisk together the flour, baking powder, and salt.
  • In a large mixing bowl, cream the butter and sugar until light and fluffy.
  • Add the eggs, one at a time, mixing well after each addition. Stir in the vanilla extract.
  • Gradually add the dry ingredients, alternating with the milk. Mix until just combined.

3. Divide and Color the Batter:

  • Divide the batter evenly into six bowls.
  • Use food coloring to dye each bowl of batter a different color: red, orange, yellow, green, blue, and purple.

4. Bake the Cakes:

  • Pour each color into its own prepared pan.
  • Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean.
  • Allow the cakes to cool in the pans for about 10 minutes before transferring them to wire racks to cool completely.

5. Make the Buttercream Frosting:

  • In a large bowl, beat the softened butter until creamy.
  • Gradually add powdered sugar, alternating with heavy cream, and beat until smooth and fluffy.
  • Stir in the vanilla extract. If desired, divide the frosting into smaller bowls and color them with food coloring for decoration.

6. Assemble the Cake:

  • Once the cakes are completely cooled, place one layer on a serving plate.
  • Spread a layer of frosting on top and repeat with the remaining layers, stacking them in rainbow order.
  • Use the remaining frosting to frost the top and sides of the cake.

7. Decorate:

  • Decorate with any additional frosting or sprinkles as desired.
