Ingredients
For the Jamuns:
- 1 cup milk powder
- 1/4 cup all-purpose flour
- 1/4 tsp baking soda
- 2 tbsp ghee (clarified butter)
- 1/4 cup milk (or as needed)
- A pinch of cardamom powder (optional)
For the Sugar Syrup:
- 1 1/2 cups sugar
- 1 1/2 cups water
- 1/2 tsp rose water (or to taste)
- 1-2 green cardamom pods (crushed)
For Frying:
- Oil or ghee for deep frying
Instructions
1. Prepare the Sugar Syrup:
- In a saucepan, combine sugar, water, and crushed cardamom pods.
- Bring to a boil, then reduce the heat and simmer for about 5-7 minutes until slightly thickened.
- Remove from heat and add rose water. Let it cool.
2. Make the Dough:
- In a mixing bowl, combine milk powder, all-purpose flour, and baking soda. Mix well.
- Add ghee and mix until the mixture resembles coarse crumbs.
- Gradually add milk, kneading gently until a smooth, soft dough forms. If it’s too dry, add a little more milk. Let it rest for 10-15 minutes.
3. Shape the Jamuns:
- Grease your hands with ghee and take a small portion of dough (about the size of a marble). Roll it into a smooth ball. Ensure there are no cracks.
- Repeat with the remaining dough.
4. Fry the Jamuns:
- Heat oil or ghee in a deep pan over low to medium heat.
- Carefully drop the balls into the hot oil, a few at a time. Fry gently, turning them often, until they turn golden brown. This may take about 5-7 minutes.
- Remove them with a slotted spoon and drain on paper towels.
5. Soak in Syrup:
- Once the fried jamuns are slightly cooled, place them in the warm sugar syrup. Let them soak for at least 1-2 hours, allowing them to absorb the syrup.
6. Serve:
- Serve warm or at room temperature. You can garnish with chopped nuts or additional rose water if desired.
