Ingredients:

  • 4 cloves garlic, minced
  • 1 lemon, quartered

  • Salt and pepper, to taste
  • 1 onion, quartered (optional)
  • 2 cups of root vegetables (like carrots, potatoes, or parsnips), chopped (optional)

Instructions:

  1. Preheat the Oven:
    Preheat your oven to 425°F (220°C).
  2. Prepare the Chicken:
    Remove the chicken from its packaging, pat it dry with paper towels, and place it in a roasting pan.
  3. Season:
    Rub the olive oil all over the chicken, making sure to coat it evenly. Season generously with salt and pepper, both inside and out.
  4. Add Flavor:
