Russion Salad Recipe

Ingredients:

  • 2 medium potatoes, boiled and diced
  • 2 medium carrots, boiled and diced
  • 1 cup peas (fresh or frozen)
  • 4-5 hard-boiled eggs, chopped
  • 1 cup pickles (gherkin or dill), diced
  • 1/2 cup cooked chicken or ham (optional), diced
  • 1/2 cup mayonnaise
  • 1 tablespoon Dijon mustard (optional)
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions:

  1. Prepare the Vegetables:
  • Boil the potatoes and carrots in salted water until tender. Let them cool, then peel and dice them.
  1. Mix Ingredients:
  • In a large bowl, combine the diced potatoes, carrots, peas, chopped eggs, pickles, and cooked chicken or ham (if using).
  1. Add Dressing:
  • In a separate bowl, mix the mayonnaise and Dijon mustard. Add this dressing to the salad mixture. Stir gently until everything is well coated.
  1. Season:
  • Add salt and pepper to taste. Adjust the dressing according to your preference.
  1. Chill:
  • Cover and refrigerate the salad for at least an hour to allow the flavors to meld.
  1. Serve:
  • Before serving, garnish with fresh parsley. Enjoy your Olivier Salad!
