Ingredients
- 4-6 trotters (paye), cleaned and cut into pieces
- 2-3 onions, finely sliced
- 2-3 green chilies, slit
- 1 tbsp ginger-garlic paste
- 2-3 tomatoes, chopped
- 1/2 cup yogurt
- 1/4 cup oil or ghee
- 1 tsp cumin seeds
- 1/2 tsp turmeric powder
- 1-2 tsp red chili powder (adjust to taste)
- 1-2 tsp coriander powder
- 1/2 tsp garam masala
- Salt to taste
- Fresh cilantro, chopped (for garnish)
- Lemon wedges (for serving)
Instructions
1. Prepare the Trotters:
- Clean the trotters thoroughly. You can blanch them in hot water for a few minutes and then rinse.
2. Cook the Onions:
- In a large pot, heat the oil or ghee. Add cumin seeds and let them splutter.
- Add the sliced onions and sauté until golden brown.
3. Add Ginger-Garlic and Spices:
- Add the ginger-garlic paste and green chilies. Cook for 1-2 minutes until fragrant.
- Stir in turmeric, red chili powder, coriander powder, and salt. Cook for another minute.
4. Add Tomatoes and Trotters:
- Add the chopped tomatoes and cook until they soften.
- Add the cleaned trotters and mix well to coat with the spices. Cook for about 5-7 minutes.
5. Add Yogurt:
- Lower the heat and stir in the yogurt. Mix thoroughly to combine. Cook for another 2-3 minutes.
6. Add Water:
- Add enough water to cover the trotters. Bring to a boil, then reduce the heat to low and cover the pot. Let it simmer for 2-3 hours, or until the trotters are tender and the flavors meld together. You can also use a pressure cooker to speed up the process.
7. Finish with Garam Masala:
- Once cooked, stir in the garam masala and let it simmer for another 5-10 minutes.
8. Garnish and Serve:
- Garnish with fresh cilantro and serve hot with naan or rice, along with lemon wedges on the side.
