Ingredients:

  • 1 cup basmati or long-grain rice
  • 2 cups water or vegetable broth (for extra flavor)
  • 1 tbsp oil or ghee
  • 1 small onion, finely chopped
  • 1 small carrot, diced
  • 1/2 cup peas (fresh or frozen)
  • 1/2 cup corn (optional)
  • 1/2 cup green beans or bell pepper, chopped
  • 1 small tomato, diced (optional)
  • 2 cloves garlic, minced
  • 1/2 tsp cumin seeds (optional)
  • 1/2 tsp turmeric powder
  • 1/2 tsp garam masala or curry powder (optional)
  • Salt and pepper, to taste
  • Fresh cilantro, chopped (for garnish)
  • 1 tbsp lemon juice (optional, for freshness)

Instructions:

  1. Cook the Rice:
  • Rinse the rice under cold water until the water runs clear. This helps remove excess starch and keeps the rice from becoming sticky.
  • In a medium saucepan, bring 2 cups of water or vegetable broth to a boil. Add the rice, a pinch of salt, and reduce the heat to low. Cover and cook for 15-18 minutes, until the rice is cooked and fluffy. Remove from heat and let it sit covered for 5 minutes. Fluff with a fork.
  1. Prepare the Vegetables:
  • While the rice is cooking, heat 1 tablespoon of oil or ghee in a large pan or skillet over medium heat.
  • Add the cumin seeds (if using) and let them splutter for a few seconds.
  • Add the chopped onion and sauté for 2-3 minutes, until soft and translucent.
  • Add the garlic and sauté for another 1 minute, until fragrant.
  • Add the diced carrots, green beans (or bell pepper), peas, and corn. Stir-fry the vegetables for about 5-7 minutes until they are tender but still crisp.

  • Add the turmeric powder, garam masala (or curry powder), and a pinch of salt and pepper. Stir to coat the vegetables evenly with the spices.
  • If you’re using tomatoes, add them at this stage and cook for 2-3 minutes until they soften and release their juices.

  • Add the cooked rice to the pan with the vegetables. Gently mix everything together, being careful not to break the rice grains. Let it cook for another 3-4 minutes, so the flavors blend together.
  • Taste and adjust salt and seasoning as needed.

  • Garnish with freshly chopped cilantro and a squeeze of lemon juice for added freshness (optional).
