Vegetable Rice Recipe
Ingredients:
- 1 cup basmati or long-grain rice
- 2 cups water or vegetable broth (for extra flavor)
- 1 tbsp oil or ghee
- 1 small onion, finely chopped
- 1 small carrot, diced
- 1/2 cup peas (fresh or frozen)
- 1/2 cup corn (optional)
- 1/2 cup green beans or bell pepper, chopped
- 1 small tomato, diced (optional)
- 2 cloves garlic, minced
- 1/2 tsp cumin seeds (optional)
- 1/2 tsp turmeric powder
- 1/2 tsp garam masala or curry powder (optional)
- Salt and pepper, to taste
- Fresh cilantro, chopped (for garnish)
- 1 tbsp lemon juice (optional, for freshness)
Instructions:
- Cook the Rice:
- Rinse the rice under cold water until the water runs clear. This helps remove excess starch and keeps the rice from becoming sticky.
- In a medium saucepan, bring 2 cups of water or vegetable broth to a boil. Add the rice, a pinch of salt, and reduce the heat to low. Cover and cook for 15-18 minutes, until the rice is cooked and fluffy. Remove from heat and let it sit covered for 5 minutes. Fluff with a fork.
- Prepare the Vegetables:
- While the rice is cooking, heat 1 tablespoon of oil or ghee in a large pan or skillet over medium heat.
- Add the cumin seeds (if using) and let them splutter for a few seconds.
- Add the chopped onion and sauté for 2-3 minutes, until soft and translucent.

- Taste and adjust salt and seasoning as needed.
